Since the last time we were here, I have raved to whoever would listen about this restaurant that served chilaquiles. Chilaquiles are fried tortilla strips, simmered in red or green salsa, topped with cheeses and your egg of choice. At El Jalisiense in Alice, the chilaquiles are served either red, green, or both, with refried beans, chorizo potatoes, and fresh tortillas. If you have never had them, you have missed a treat.
I prefer mine with eggs over easy and both salsas. This is sooooo good. But, if you eat all of it, plan for a nap.
As we got back to the park, we both glimpsed a bobcat entering the brush at our campsite. Why is there not a picture? Because the bobcat refused to stop and pose while I got the camera.
Lake Corpus Christi is one of our favorite state parks. There are trails, paved walkways, shoreline, and birding opportunities. However, the birds here, like in south Texas, seem scarce.
There is also the history of the park intertwined with the CCC, which built areas in the park. I always wonder about those young men who built the pavilion during 1934-35, 88 years ago. Most were probably in their late teens or early 20s, born in the 1910s. Few are still alive.
There are always some little things to see. Some little girl's doll threw a shoe and this little leaf-cutter ant was working harder than all of us.
